“As I have mentioned in the past, Dominio Do Bibei is located in the most isolated and rustically beautiful corner of Ribeira Sacra, Quiroga-Bibei, where the terraced mountain vineyards are planted on granite to the customary regional blends dominant in Mencía, co-planted with smaller percentages of Brancellao, Garnacha Tintorera, Bastardo and Caiño. The Lalama bottling is made from de-stemmed grapes, fermented with indigenous yeasts and raised in older Burgundy casks prior to bottling. The 2020 Lalama comes in at fourteen percent octane and delivers a pure and very refined bouquet of pomegranate, cassis, cigar wrapper, graphite, granitic soil tones, a touch of fresh herb tones, cigar smoke and just a touch of cedary oak. On the palate the wine is deep, full-bodied and beautifully balanced, with superb depth at the core, excellent transparency and grip, fine-grained tannins and a very long, focused and complex finish. This is a great bottle in the making, but give it some hibernation time in the cellar to let those suave tannins start to fall away and the wine to drink with generosity.”

"Our estate-grown Chardonnay fruit was picked and hand-sorted in the vineyard before spending the night in our cold room. Chilled grapes were softly pressed, and the juice was gently pumped into a stainless-steel tank and cold settled. Once the heavy solids were removed, the juice was racked to a stainless steel fer mentor, then inoculated for primary fermentation. Following primary fermentation, the wine was racked to barrels, inoculated for malolactic fermentation, then periodically stirred to enhance depth and mouthfeel. The Aligoté grapes used for the Domaine's only white wine come from a total of 2.26 hectares of vineyards. A tiny 0.13 hectares situated in the commune of Nuits Saint Georges and 2.13 hectares in Villers-La-Faye in the Hautes Côtes are the sources. The vines in Nuits Saint Georges were planted in 2013, while those in Villers are impressively between 50 to 80 years old. These two vineyards are characterized by their deep clay soils. The winemaking process involves spontaneous yeast fermentation and aging for a period of 6 months in stainless steel tanks.

"...The juice is pressed into barrel before primary fermentation and then Pierre-Yves leaves them alone as much as possible. Fermentation is always initiated by natural yeast and he does not stir the lees, rack the barrels or even filter the wines. Pierre-Yves also prefers unusual barrels – about 80% of them are 50% larger than normal Burgundy barrels. Depending on the vintage, most of the top wines are aged in new oak, but the larger barrels minimize the oak influence and also delay the malolactic fermentation. The cellar is also kept very cold to further delay the malolactic fermentation – which ideally finishes 8-9 months after harvest. Approximately 18 months after harvest the wines are lightly fined and then bottled. The extended elévage helps preserve aromatic intensity and purity as well as giving the wines the right balance for long-term ageing." Importer Notes

"The Hautes-Côtes de Beaune Blanc from PYCM features lovely aromas of grapefruit, lime zest, and fresh white flowers. The texture is light but crisp, and a salty minerality shines through on the palate. The grapes come from three parcels in the Hautes Côtes, named for a nearby nature preserve in Cormot-Vauchignon at over 400 metres elevation—the delayed budbreak at this cool site saved these vines from damage during the frost of 2021. "No 2017 was produced, so after the 2016 I tasted a while ago, we jump to the 2018 La Dama, vinified by Enrique Basarte and Elisa Úcar and blended and bottled by Raúl Pérez, the new owner of the project. They always look for a more delicate expression of Garnacha from selected stonier plots of old head-pruned and dry-farmed vines in the village of San Martín de Unx that are worked organically and biodynamically but are not certified. The wine is stunning, elegant and aromatic, with depth, complexity and grip. It's incredibly young and expressive and doesn't show its age at all; it has a refined nose and is quite fruit-driven and floral, with very integrated oak (like never before), supple flavors and very fine tannins. The Old Shop Block emerges from a parcel of own-rooted, Calera clone Pinot and was done with 60% whole clusters. My visit with John Raytek at Ceritas was one of the highlights of my January tastings. The 2015s are off the charts great. Raytek clearly picked early, as the wines are endowed with tremendous energy and tension, the early-ripening vintage notwithstanding.
