“The 2021 Mainqué Chardonnay is the second white here, produced by Jean-Marc Roulot from 40-year-old ungrafted vines in Mainqué in the Lunita property (where they regrafted the vines to Chardonnay), where they work with cover crops, no chemicals, and bees. It fermented with indigenous yeasts, 70% in French oak barrels and 10% each in clay, concrete egg and stainless steel, and it matured for nine months, 70% in barrel and 10% each in concrete and stainless steel. It has the precision and purity of Roulot, which to a certain extent is the result of thorough work with the press. ‘He sent us the press program,’ Piero told me. ‘And we now have two presses. We are learning.’ When I thought about what was in common between the reds and the whites, I came up with three words: precision, purity and elegance. It has notes of white flowers and a touch of fennel and other aromatic herbs. It was harvested early in the morning and in the season, and the wine is light and refreshing, ethereal, weightless and with purity and precision. It's a delight. "Not surprisingly, having only been in bottle for one week, the 2020 Chablis AC from Domaine Bessin is a little shaken up post-bottling, but it is also abundantly clear that there is excellent depth and transparency here, coupled to lovely acidity and plenty of length and grip. Based on how well the wines that were still in tank showed, I have zero doubt that this wine too will deliver lovely precision and focus as well, once it has recovered from the mise. The bouquet offers up scents of apple, pear, chalky soil tones, a touch of citrus peel and a topnote of dried flowers. On the palate the wine is deep, full-bodied and nicely balanced, with excellent material at the core, fine mineral undertow, zesty acids and impressive length and grip. "The 2009 Chablis 1er Cru Vaillon offers up aromas of waxy citrus, beeswax, fresh peach and dried white flowers, followed by a medium to full-bodied, ample and satiny palate with lively acids and a broad, expansive finish. Defaix's 2007 and 2008 Vaillon bottlings are still quite tight, but the 2009 is already wide open. On my most recent visit to the Defaix winery, I tasted with Paul-Etienne Defaix, the 15th generation of the family to perpetuate the domaine. Demand for the wines is high. The estate's 2010 premiers crus were bottled this year, with plans to release them once the 2009s, reviewed here, are sold out. While I knew Defaix practiced very long élevage, I confess I hadn't quite realized just how long, but a tour of the winery revealed tank after tank, full of Chablis patiently awaiting its moment in the limelight.
