"Produced by the revered Camarena family in the iconic distilling town of Arandas, Casco Viejo Tequila is an outstanding entry-level tequila. Blending tradition and modernism, the family operates the same estate grounds they’ve worked since the 1830s, while employing a patented production process called Zero D which integrates recycling into all aspects of the tequila-making process.
Casco Viejo is made entirely from Blue Weber agave grown in the Los Altos region of Jalisco; this highland plateau, around 7,000 above sea level, is widely regarded as one of the top agave producing environments in Mexico by virtue of its iron- and clay-rich red soil, hot days of sun exposure and cooling breezy nights. Production is vertically integrated, as the Camarena family owns 18 fields of agave. Distilled using copper pot stills and built upon a Mexican-sourced neutral grain distillate of corn, rye, wheat, and barley; thirteen botanicals including juniper, palo santo, white sage, jasmine, coriander, elderflower, lavender, rosemary, cedron, myrrh, lime & orange zests echo the curandera (healer) traditions that use many of these same ingredients to cleanse negative energy, attract love, and expand consciousness. Since the recent surge in popularity of mezcales made from numerous rare or wild agave, the once noble espadín has fallen into disrepute, often seen as commonplace and basic. This false impression could hardly be more incorrect. Truth is, the sugar-rich espadín has been the lifeblood of mezcal producing families for decades, and is often the most revered variety for its adaptability and generous yield, giving it a central role in social, civic and spiritual events for Oaxacan mezcal communities. "In the border state of Tamaulipas, agave distillates have a unique history all their own, exemplified by this beautiful ensamble (blend) from maestro Jose Castellanos. Three different agave are used in equal proportion: Agave asperrima and Agave americana, both referred to generically as “Maguey” (Spanish for “agave”), with the smaller Agave univittata, locally dubbed “Amole”. All three are harvested and cooked together in a conical earthen oven; their caramelized juices are then squeezed out using an antique sugarcane press, or “trapiche”, while the fibers are discarded. During U.S. Prohibition, moonshine-style stills were smuggled over the border from Texas and became the favored local method: a traditional pot still is amended with a wooden barrel or “thumper” acting as a condenser between the pot and the coil.
