"Our estate-grown Chardonnay fruit was picked and hand-sorted in the vineyard before spending the night in our cold room. Chilled grapes were softly pressed, and the juice was gently pumped into a stainless-steel tank and cold settled. Once the heavy solids were removed, the juice was racked to a stainless steel fer mentor, then inoculated for primary fermentation. Following primary fermentation, the wine was racked to barrels, inoculated for malolactic fermentation, then periodically stirred to enhance depth and mouthfeel. The 2019 Sea Smoke Chardonnay was aged for a total of 10 months prior to bottling with no fining and no filtration.” Winery Notes

"The 2022 Chardonnay (Santa Barbara County) is a fabulous introduction to this range. Orchard fruit, citrus, white flowers and mint give the 2022 lovely aromatic presence. The blend of Santa Maria, Sta. Rita Hills and Los Alamos fruit works so well in this bottling. Justin Willett continues to expand his formidable empire. Readers will note a number of new releases in this year’s collection. When I first met Willett, a dozen years ago, Tyler was a new winery working exclusively with purchased fruit. Today, Tyler owns two estate vineyards, the new Mae Estate and the historic Fiddlestix, both in the Sta. Rita Hills, and produces a far wider range of wines. That is a dramatic transformation in a very short period of time. In general, the Chardonnays see 10 months in barrel followed by 6-8 months in tank. "Our Santa Barbara County Chardonnay is comprised of fruit from various high quality vineyard sites throughout the county, with the majority grown at the the Kick-on Ranch. This bottling is intended to provide great value and represenation, while keeping focus on quality and typicity. The chardonnay is whole cluster pressed to tank, settled briefly before being moved to another tank for fermentation. After fermentation is active, the juice goes down to 228L barrels and 500L puncheons. We perform no battonage and the wine goes through full Malolactic Fermentation. The wine is left on lees for 11 months before going back to tank for an additional few months of aging. The result is a fresh and bright style of chardonnay carrying a citrus, mineral, and marine profile - very much "Santa Barbara"." Tyler

It is drinking wonderfully .... 00 Wines, founded by husband-and-wife duo Katherine and Christopher Hermann, exclusively produce Chardonnay and Pinot Noir. They derived the name ‘00’ from numerology and say it represents true and absolute potential. Their first vintage was in 2015, and in 2017 they moved to a shared winemaking facility that they operate out of today. Katherine takes charge of the creative direction with packaging and communications. Her background in marketing brought her to New York City and Boulder, Colorado, working for technology startups, before arriving in the Willamette Valley. Prior to establishing 00 Wines, Christopher was a legal advisor for nearly 40 years for many of the top names in the wine and spirits industry, practicing environmental law. They are inspired by the great wines of Burgundy and implement many Burgundian techniques, advised by their consultant Pierre Millemann and their winemaker Wynne Peterson-Nerdry. The texture is creamy and rich, but there is no fat, and the overall impression is very Burgundian. Superb length and great aging potential make this is an imposing wine. "Very pale, bright silver-yellow. Pungent yet subtle scents of grapefruit pith, gooseberry and minerals; smells bone-dry. Surprisingly silky and dense yet weightless on entry, then citrussy, dry and penetrating in the middle palate, with an almost metallic impression of minerality adding punch to the grapefruit, lemon and shiso leaf flavors; the wine's complexity reminded me of a top Loire Valley version. More austere than the 2018 a year ago but perhaps with even greater potential. The note of gooseberry repeats on the lingering, minerally back end, which avoids any phenolic dryness. Note that Chris Peterson made numerous vintages of the outstanding Chaleur Blanc Sauvignon Blanc/Sémillon blend during his tenure at DeLille Cellars.
