The Aligoté grapes used for the Domaine's only white wine come from a total of 2.26 hectares of vineyards. A tiny 0.13 hectares situated in the commune of Nuits Saint Georges and 2.13 hectares in Villers-La-Faye in the Hautes Côtes are the sources. The vines in Nuits Saint Georges were planted in 2013, while those in Villers are impressively between 50 to 80 years old. These two vineyards are characterized by their deep clay soils. The winemaking process involves spontaneous yeast fermentation and aging for a period of 6 months in stainless steel tanks.

"The harvest is manual and the grapes cooled before being pressed. Our Rosé comes from direct pressing. The grapes are picked less ripe than for the Reds in order to keep more aromatic freshness and to have lower alcohol content. The wine is aged on fine lees. The malolactic fermentation is done, the wine gains in finesse on the finish and the Mourvèdre brings power to give a real gastronomic Rosé. The vintage is ample, fruity and spicy with a tonic mineral finish. Very tasty as an aperitif, it goes very well with summer, Mediterranean or spicy cuisine: grilled vegetables, summer salads, terrines, fish soups, tapenade, eggplant caviar, grilled meats.
