"Saves's champagnes are deliciously expressive of the Bouzy terroir, with their rich, ample fruit and sleekly harmonious structures. The absence of malolactic enlivens the fruit flavors without feeling at all aggressive, adding to the sense of purity and harmony here. All of Saves's champagnes are pure Bouzy grand cru...For his rose, Saves doesn't use a non-vintage brut as a base, but creates a completely different cuvee, with chardonnay usually accounting for more than half of the blend." |
