Depending on vintage conditions, the malo-lactic fermentation is sometimes blocked in order to maintain the proper high level of acidity. "Interestingly, the 2020 Javernières is a full point lower in listed octane than the Côte du Py in this vintage, coming in at 13.5 percent alcohol. These vines are forty years of age and planted in the vineyard’s deeper, clay and iron-veined soils. The bouquet is truly stunning this year, offering up complexity, purity and a subtle sense of sappiness that is bound to grow as the wine blossoms. It delivers scents of red and black cherries, pomegranate, a touch of red plum, gamebird, woodsmoke, a complex base of soil tones and delicate topnote of fresh thyme. On the palate the wine is deep, pure and full, with a great core of fruit, superb soil undertow, excellent complexity, ripe, fine-grained tannins and a long, tangy and perfectly focused finish. It's a blend of 60.5% Cabernet Sauvignon, 31.5% Merlot, 5.5% Cabernet Franc and 2.5% Petit Verdot that checks in at a healthy pH of 3.65. Why is it so good this year? "The 2022 Cheval Blanc is shaping up to be one of the wines of the vintage. Deep, seamless and striking in its beauty, the 2022 possesses pedigree to burn. Readers will find a sumptuous wine, but there’s plenty of tannin lurking beneath all of that intensity. In fact, the 2022 is the most tannic Cheval since 2010. It has 13.3% alcohol, a pH of 3.65 and the IPT of 74. Matured in 100% new oak, it has a fresh and vibrant bouquet whilst retaining the classicism of this First Growth. This is more subtle than Mouton-Rothschild or Latour, which is always the case at en primeur, yet there is a brooding intensity that draws you in as it unveils some gorgeous blackberry and graphite aromas. The palate is just superb. This has more density, more vigor, more depth and you could even argue more ambition than the 2015 Lafite-Rothschild showed last year. Château Samion is the family domaine of Jean‐Claude Berrouet, the man who oversaw more than 40 vintages at the famed Château Petrus in Pomerol from 1964until his retirement in 2007. Together with his son Jean‐Françis, they produce a small amount of wine from their holdings in Lalande‐de‐Pomerol which total a scant1.2 hectares. The first vintage for Château Samion was in 1979 when they rented the vineyards, but since 1985 they have been owned by the Berrouet family and the vines are now an average of 45 years in age. There is but one wine made at Château Samion. The wine is made from 100% Merlot, and one will find it is made in the same manner and with the same exacting care as Château Petrus. "Not surprisingly, having only been in bottle for one week, the 2020 Chablis AC from Domaine Bessin is a little shaken up post-bottling, but it is also abundantly clear that there is excellent depth and transparency here, coupled to lovely acidity and plenty of length and grip. Based on how well the wines that were still in tank showed, I have zero doubt that this wine too will deliver lovely precision and focus as well, once it has recovered from the mise. The bouquet offers up scents of apple, pear, chalky soil tones, a touch of citrus peel and a topnote of dried flowers. On the palate the wine is deep, full-bodied and nicely balanced, with excellent material at the core, fine mineral undertow, zesty acids and impressive length and grip. In any case, this is going to be an excellent bottle and a superb value this year, as it offers up a very promising bouquet of pear, tangerine, fruit blossoms, a lovely, almost flinty sense of chalky minerality and a hint of the beeswax to come with bottle age. On the palate the wine is bright, deep and full, with a lovely core, superb mineral drive and grip, bright tangy acids and a long, nascently complex finish. This is aromatically similar to the regular cuvée but with even better Chablis character. However, there is notably better mid-palate density and power to the bigger-bodied flavors that exude outstanding intensity while coating the mouth on the beautifully long finale. Defaix's 2007 and 2008 Vaillon bottlings are still quite tight, but the 2009 is already wide open. On my most recent visit to the Defaix winery, I tasted with Paul-Etienne Defaix, the 15th generation of the family to perpetuate the domaine. Demand for the wines is high. The estate's 2010 premiers crus were bottled this year, with plans to release them once the 2009s, reviewed here, are sold out. While I knew Defaix practiced very long élevage, I confess I hadn't quite realized just how long, but a tour of the winery revealed tank after tank, full of Chablis patiently awaiting its moment in the limelight. Since my last visit, 2007 and 2008 have both come and gone, but I tried examples of both and found much to admire. Robert Moncuit is a French family winery with over a century of history. It is located in Le Mesnil-sur-Auger, where Alex Monqui planted vines in 1889. The first cuvées of them were obtained by Robert, Alex's grandson, only in 1935. Since then, the estate has been producing exceptional sparkling wines that are famous all over the world. The volume of wines produced is limited and amounts to 60,000 liters per year. After the death of Robert Monqui in 1987, his children, Françoise and Pierre Amille, took over the management of the company. They create elite champagnes from grapes from an area of 8 hectares of the Grand Cru category, fully occupied by Chardonnay grapes. "A cuvée that needs little introduction, from a famed terroir of limestone slopes which rise up above the valley floor. The fermentation was particularly slow says Matthieu [Baudry], so this went into barrel late, and it was still carrying 2.5 g/l residual sugar. As a consequence there was a little refermentation during the summer months of 2020. By the time of my tasting there was still a little carbon dioxide gas in the wine, signifying that. The colour is a gorgeous black violet hue, and the nose is filled with aromatic black and curranty fruits, with hints of liquorice and rose garden. Trying to look past the residual gas on the palate (easier said than done) this feels fresh and vigorous, with a silky composition, and notes of liquorice, toast, currant and white chalk. "Darker in its ruby color, the 2019 Laurasie is a pure Cabernet Sauvignon from almost 20-year-old vines on the stony Jurassic plateau of Fosse-Sèche, where yields are not bigger than 20 hectoliters per hectare. This is fleshy and concentrated yet pure, fresh and elegant on the deep, terroir-driven and beautifully floral (violets) as well as graphitic nose that is absolutely distinctive in its delicate, pure and balanced style. Black and blue berries, dark cherries, green paprika, pencil lead and herbal, wet gravelly notes lead to a medium to full-bodied, highly elegant, refined and perfectly balanced palate that exhibits perfectly ripe, round and juicy fruit with a firm but ripe, very fine and elegant tannin/acidity complex. The finish of this concentrated red is tight, intense and spicy, showing black berry and chocolate as well as graphite and coal with dark cherry notes.
