The Aligoté grapes used for the Domaine's only white wine come from a total of 2.26 hectares of vineyards. A tiny 0.13 hectares situated in the commune of Nuits Saint Georges and 2.13 hectares in Villers-La-Faye in the Hautes Côtes are the sources. The vines in Nuits Saint Georges were planted in 2013, while those in Villers are impressively between 50 to 80 years old. These two vineyards are characterized by their deep clay soils. The winemaking process involves spontaneous yeast fermentation and aging for a period of 6 months in stainless steel tanks. |
