“The 2020 les Fichots from Domaine Rollin is another fine bottle in the making, but it is a bit more structured out of the blocks and will need a couple more years in the cellar than the les Vergelesses before it starts to drink with generosity. The bouquet wafts from the glass in a mix of cassis, dark berries, espresso, a complex base of soil tones, grilled game, bonfire, a touch of cedar and a nice dollop of sweet stem tones from the whole clusters in the upper register. A red wine of real elegance. The nose develops delicious aromas of well-ripe strawberries, raspberries and some spicy notes. The palate is well-rounded and fleshy, supported by a very mineral finish. It is worth waiting two to three years in bottle. Its structure and depth allow it to be matched with grilled red meats, with meats in highly seasoned sauces, with roast quail or pigeon." Producer Notes
