"From various high quality vineyard sites, our Rosé is composed from the free-run juice afforded to us by simply transporting the vintage’s first Pinot Noir to our cellar. During this short trip across the Sta. Rita at dawn, the Pinot Noir is gently pressed by its own weight, rendering our first taste of the vintage—and the basis for our exceptionally limited rosé. We carry this juice to a stainless steel tank and old barrique for fermentation using native yeasts, and then raise the wine in neutral oak for about four months. The wine is unfined and filtered. The resulting wine speaks of the Sta. Rita Hills with unique clarity and tension: it is at once floral and mineral, carried by a through-line of bracing acidity and sea spray." |
