"The 2009 Chablis 1er Cru Vaillon offers up aromas of waxy citrus, beeswax, fresh peach and dried white flowers, followed by a medium to full-bodied, ample and satiny palate with lively acids and a broad, expansive finish. Defaix's 2007 and 2008 Vaillon bottlings are still quite tight, but the 2009 is already wide open. On my most recent visit to the Defaix winery, I tasted with Paul-Etienne Defaix, the 15th generation of the family to perpetuate the domaine. Demand for the wines is high. The estate's 2010 premiers crus were bottled this year, with plans to release them once the 2009s, reviewed here, are sold out. While I knew Defaix practiced very long élevage, I confess I hadn't quite realized just how long, but a tour of the winery revealed tank after tank, full of Chablis patiently awaiting its moment in the limelight. Since my last visit, 2007 and 2008 have both come and gone, but I tried examples of both and found much to admire. "The prestige cuvée of Manarine is destined for aging and bears the name: “Terres Saintes”. It is produced from a selection of lower yielding old vines (average 55 years old). Gilles destems the entire harvest and uses cement tanks for fermentation. The “Terres Saintes” (structured as a “vin de garde”) benefits from a longer “cuvaison” of 30 days or more. During the “elevage” both red wines go through “delestage” and “remontage” (a technique whereby the tank is completely emptied and the wine pumped back into it on top of the layer of skins) to extract color and flavor. Once the fermentation is complete, the wine is racked into cement vats for aging but 20% of the “Terres Saintes” is also aged for 8 months in “demi-muids” (larger barrels of 600 liter size). The grapes are briefly macerated and the fermentation occurs at controlled temperatures (around 15 degrees Celsius) for two to three weeks. "The 2014 Montefalco Rosso San Valentino is the result of a very difficult vintage for Paolo Bea, though you’d never know it. Here I’m finding an exotic, layered expression, as rosy florals and peppery herbs give way to sweet, crushed strawberries with smoky minerals, hints of soy and rich brown spices. Soft textures effortlessly wash across the senses with feminine weight, displaying pure red and blue fruits, and giving way to a coating of liquid florals and saturating minerals. The finish is long and grippier than expected, yet purity is the name of the game, as pretty berry fruits resonate over a gentle twang of youthful tannin. Giampiero’s vineyards were hit hard by downy mildew in 2014, and all of the fruit he saved went into this year's San Valentino. "“Miranius”—which translates loosely into Catalan as “peers into nests” (a tribute to the foxes which sometimes roam their biodiverse vineyards looking for a snack)—is 100% Xarel-lo, in part from some of the estate’s younger vines, and in part from fruit purchased from a handful of biodynamically farming friends in the immediate area. Fermentation proceeds spontaneously in stainless steel, and the wine rests on its fine lees in steel for six months before being bottled with a non-sterile filtration and a minuscule dose of sulfur. “Miranius” displays the brisk, agile side of Xarel-lo, a variety whose relatively neutral fruit character allows for a powerful articulation of calcareous minerality. Xarel-lo’s naturally high acidity brings balance in this warm Mediterranean climate, and indeed this wine is bright, saline, and immensely refreshing, as well as a tremendous value." "Their top wine is the single-vineyard Xarel·lo 2008 Turó d'en Mota, named after the origin of the grapes. 2008 was an exceptional year in the zone, and the wine fermented in 300-liter oak barrels and then was put to referment in bottle, where it spent no less than 155 months (12 years and 11 months!) with the lees. 2008 produced healthy clusters of extraordinary acidity, ideal for the long aging, and it has only 11% alcohol, an incredible pH of 3.02 and six grams of tartaric acid. Maybe I'm influenced but the nose, but the aromatic palette from this wine is completely different from the rest of the portfolio, with green olives, curry, spices, toast and smoke and wet chalk, all in a very subtle way. This has density, fine tannins and citrus freshness that makes you salivate. This is a superb white wine that happens to have bubbles... A completely different wine, full of personality and character. This feels very young and undeveloped, as it's aging at a glacial pace. Winemaker Ton Mata told me other 2008s have evolved in a very positive way.
