That’s important. Because Jonata is not just another winery. We’re talking about one of the elite properties in the Central Coast, producing wines that routinely score in the high 90s and sell for serious money. And somehow, this exists alongside it. The idea behind Pairing is deceptively simple. Take the same obsessive farming, the same elite barrel selections, the same blending expertise, and funnel it into a wine designed to massively overdeliver for the price. And it absolutely does. The blend is classic luxury California Bordeaux-style red: 70% Cabernet Sauvignon, 10% Cabernet Franc, 10% Merlot, and 10% Petit Verdot. Fruit sources include both Jonata holdings in Ballard Canyon and additional material from a sister property in Napa Valley, giving the wine both richness and structure. And the style? This is polished, silky, deeply fruited California Cabernet done right. Dark fruit, cassis, plush texture, layered spice, and the kind of richness that people normally associate with much more expensive Napa Valley wines. The difference is subtle refinement. The flagship wines may have a little more depth through the mid-palate, a little more intensity, a little more nuance. But the DNA is unmistakably there. That’s what makes this wine so dangerous. Because if you poured this blind for most Cabernet drinkers and told them it cost $100+, they probably wouldn’t blink. Critics noticed too. 93 points from Jeb Dunnuck, who compared it favorably to Cabernet Sauvignons costing four to five times the price. And honestly? That feels accurate. At around $25, this is one of the strongest Cabernet values coming out of California right now. Not just Central Coast. Not just Napa alternatives. The entire state. This is the kind of wine you buy by the case and drink over the next decade with absolutely zero regret.
