"Many people in Burgundy believe Serafin is producing the finest wines in Gevrey-Chambertin. He continues to lower his yields, and while he never did much filtering, in 1990 he decided to eliminate it. His 1990s are all concentrated, backward, dense wines that will require some patience. In previous vintages, I have often preferred Serafin's Les Cazetiers to his Charmes Chambertin. Not in 1990! The Charmes Chambertin is more open than the Les Cazetiers . . . with the splendidly opulent, rich, gamey black-raspberry flavors. This rich, voluptuously textured, sweet, expansive wine makes a considerable impact on the palate, but the tannins are less noticeable than in Les Cazetiers. The finish is exceptionally long and the balance is impeccable."
