"For my 40th birthday, the 1987 Henri Jayer Echézeaux was the wine that I chose to mark the occasion. Most times that I have the good fortune to drink Henri Jayer wines, it is in a larger setting where one glass of each wine is all that any taster is allotted. To actually sit down with my wife and enjoy an entire bottle of Jayer Echézeaux over the course of the evening truly seemed like regal living. The ’87 Henri Echézeaux is a very elegant and a point wine that has been fully into its apogee for a number of years already, but which still shows no signs of imminent decline. It is nowhere near as opulent or velvety as so many wines that sport the Jayer label, but it shares the master’s fine touch with its breathtaking purity and laser-like focus. Initially, the tangy acids of 1987 had this wine a tad under wraps, but it blossomed magically with a bit of air in decanter. On the nose this is a profound bottle of wine, with scents of crushed raspberries, red plums, vinesmoke, violets, a bit of duck, allspice, minerals and vanillin oak. On the palate the wine is deep, fullish and tangy, with very good depth . . . . The finish is long, bright and tangy, with a lovely peacock’s tail. This wine is fully at its zenith, and it is hard to imagine it getting any better than it is today."
