"Another Burgundian style of wine from Paul Lato is the 2006 Pinot Noir Sine Cera Fiddlestix Vineyard. Made from Dijon clones 113 and 667, this wine exhibits a much earthier, spice-driven style, with hints of bouquet garni, meat juices, cinnamon, and red and black fruits. The wine has more tannin, structure, and muscle than the other two offerings, but its dark ruby color, broad flavor profile, and long finish are top-flight . . . . This tiny artisinal producer continues to show a brilliant touch with his Pinot Noirs, and of course his Syrahs, which were reviewed in an earlier issue of The Wine Advocate. Everything is fully destemmed, the sorting process is draconian, and the wines are given a cold soak and then fermented naturally and bottled with neither fining nor filtration."
