"The grapes are picked and sorted by hand and after de-stemming and crushing, are sent in tanks for traditional vinification. Maceration on the skins for 22 days in temperature-controlled stainless steel tanks at 28°C. The alcoholic fermentation lasts an average of 10 days. The wine is then racked into 30hL oak barrels where it remains for 12 months for aging and malolactic fermentation. After one year the wine is kept in steel tanks for about a month, then lightly filtered, bottled and aged for another 4 months before market release. Very intense ruby ed color. The nose is a remarkably fragrant with red fruits such as cherry and raspberry, followed by a hint of licorice and coffee. Its sweet and velvety tannins wrap around the mouth, leaving a deep feeling of freshness, making this pleasant wine fine and very elegant." |
