"The last bottle of the 1991 Mayacamas cabernet that I tasted was really beginning to blossom, but this particular bottle was still a bit youthful and in need of a few more years of bottle age. However, even in its shut down stage it is clearly in the running for wine of the vintage. Interestingly, the ’91 Mayacamas cabernet, at 12.5 percent alcohol weighs in a full degree lower than other top ‘91s, such as Dominus. The nose on the ’91 Mayacamas offers up a complex mélange of black cherries, a youthful touch of bell pepper, tobacco leaf, stony minerality, herbs, cigar smoke and a delicate touch of cedar. On the palate the wine is very deep, full-bodied, and very tangy, with a fine core of sweet fruit, impeccable focus and balance and a very long, classy and still fairly tannic finish. While this wine is eminently drinkable with some extended aeration today, I would still be strongly inclined to give it another decade’s worth of cellaring, as there remains layers of complexity yet to unfold. When the dust settles on the 1991 Mayacamas, it may well prove to be one of the greatest vintages of cabernet made at this great estate and my score may seem ridiculously conservative."
